I like the ramen chain restaurants called Afuri, they have a vegan ramen that is so tasty!
I'm far from being a ramen specialist but I like the Sapporo style ramen with a miso based broth and butter and corn.

I live in Tokyo but work in Saitaima and I often got a ramen Shop called ジャンクガレッジ Junk Garage in Saitama
There is a fantastic ramen shop in Kobe called Yokohamakakei. You can free rice refills included with your order of Ramen. You can choose the texture of the noodle and type of soup. Here is a video of me eating at that restaurant.

I'm one of the few people who LOVES Tokushima ramen. The broth is a mix of tonkotsu and soy sauce.
