When making Japanese curry at home it's possible to buy Japanese curry roux (ルー). On the package there's the basic recipe with.the following ingredients: onion, carrot, potato and meat.

Another of my tries is potatoes and ground meat. It's very simple since there are only 2 ingredients. It's not bad, can switch to soy meat for a vegetarian/vegan version. It still taste like curry but it's a very different experience.
Omg we eat all of the same things, I made Japanese curry last night. I put in potatoes, carrots, red onions, leeks, and sometimes I like to put cheese on top, my partner made one for him with beef, shrimp and all the same vegetables. Its another great dish to warm you up. and then with leftover curry, we like curry udon soup, with adding water and udon noodles. I have never tried to make anything else using the curry blocks, but it sounds like a nice challenge.
I usually do the standard veg - onion, carrot, potato, and omit the meat. I prepare meat separately. Alternatively I preprare eggplant, mushrooms, broccoli or other good stuff in the toaster oven and add it after I've made the curry.
